From one of the few privately-owned farms in Ethiopia, Ana Sora defies explanation. As of 2018, the farm's owner, Esrael Degefa has more than doubled the growing area, now covering 250 hectares. Mr. Degefa sorts cherries with precision in flotation tanks to separate the under-ripe cherries. This technique, the very high altitude that slows cherry maturation and an impeccable attention to the drying process are what make this coffee so special.Parameter Guides
