CATALAN 'NATURAL'
honey, pear & smooth
Catalan’s primary crop, expressed through boundary-breaking processing. Bourbons are what drew us to Nico’s farm on that fateful day in 2012. Shade grown at high altitude; attended to with immense care. About six years ago, Nicholas introduced natural processing to his farm at a time where they simply weren’t being exported from Guatemala. His expert processing broke new ground, and now, naturals are easily the most acclaimed coffees we offer from Catalan.

CATALAN 'PACAMARA'
marmalade, cinnamon & creamy
A coffee that we’ve watched grow from the nursery, now fully-realized and ready to share. Pacamaras are among the new experimental varieties Nicholas grows on the farm. Once the seedlings successfully respond to the climate and altitude, they are transplanted to the shaded highlands to mature and bear large red and yellow cherries. You’ll notice that even the beans look uncommonly big!
This washed Pacamara is a fruity, jammy flavour explosion. Characteristics that Pacamaras are known for, but taken to bright new places with Nicholas’s processing.
