WHAT IS IT?

Coffee extraction is the process of dissolving the soluble compounds of roasted coffee in water. The degree to which these compounds are extracted from the coffee is determined by many variables. 

 

 AND WHY IS IT NECESSARY TO UNDERSTAND?

When we brew coffee our goal is to extract the maximum desirable flavour material from the ground coffee, resulting in a beverage with balanced, nuanced flavour and a pleasing strength. These relationships are dependant on consistent and even extraction. Improving distribution of grounds in the basket is a key element of both and promotes taste balance in higher extractions.
