COFFEE + ALCOHOL. WHAT'S NOT TO LOVE?

Our nitro infused Pilot Cold Brew has the distilled sweetness of a fine liqueur and the effervescence of champagne – it was practically begging to become part of an expertly crafted cocktail.

So we challenged the brightest stars of Toronto’s mixology scene to use our nitro cold brew as inspiration for the perfect coffee cocktail. What they came up with is a stunning array of flavour profiles, each one with its own unique alchemy, sure to delight when sipped on a hot summer night. 

Best of all, the recipes are all here for you to use. Experiment, create, imbibe, repeat.

MIXOLOGIST LINDSAY WOOD
FROM ROSE AND SONS PRESENTS: 
 
BEAUTIFUL DARKNESS
 
2oz Skoll Stout 
(or your favourite stout)
3/oz spiced simple syrup
(2:1 honey/water. Simmer with cardamom, cloves, 
nutmeg & any other spices that tickle your fancy)
1 oz Averna
3oz Pilot Cold Brew
2 dashes xocolatl bitters 
 
Add all ingredients – except for 
the beer – to a shaker tin. 

Shake, add beer to tin & strain 
over ice, into a tall rocks glass.
 
Serve.

FROM BAR ISABEL PRESENTS: 
 
THE JUAN VALDEZ
 
 1oz Pilot Cold Brew
1.5oz Bols Genever (Dutch Gin) 
1/2 oz Ancho Reyes Chili Licor
1/4 oz Branca Menta
1 dash Regans Orange Bitters
Lemon Oils
 
Build in a mixing glass. 
 
Stir, and serve straight up with the 
oil of one lemon zest as garnish. 
 
Serve.

FROM SOHO HOUSE TORONTO PRESENTS: 
 
THE COLD BREW COLADA
 
2oz Pilot Cold Brew 
1oz Bacardi White Rum 
1oz Bacardi Oakheart
1oz coconut creme 
1/2 oz simple syrup 
 
Shake all ingredients together 
& pour into a cocktail glass.
 
Garnish with a piece of fresh pineapple, 
with rind end encrusted with finely muddled 
espresso beans & brown sugar.
 
Serve.

FROM DILLON'S SMALL BATCH DISTILLERS PRESENTS: 

COLD BERRY BREW
 
2oz Pilot Cold Brew
1.5oz Dillon’s Cherry Gin 
1/2 oz strawberry simple syrup
3 dashes Dillon’s Blackcurrant Bitters
Bar spoon of lemon juice
 
Add all ingredients to a shaker 
or mixing glass with ice. 
 
Stir, or shake & strain, into 
a Collins glass over fresh ice.
 
Serve.

FROM THE HARBORD ROOM PRESENTS:

CAPRI PANTS
 
1oz Pilot Cold Brew
1.5oz Cachaca
1/2 oz Wilcox Syrup 
(honey, grapefruit & cinnamon)
1/4 oz Amaro Averna
 
Shake all the ingredients vigorously on ice.
 
Double strain into a cocktail glass 
& grate a little cinnamon on top.
 
Serve.
