La Salaca – Costa Rica

We are so happy to continue our relationship with Mr. Salazar and his excellent La Salaca. This coffee was one of our favourites at the roastery last year, and it ended too soon.

The yellow honey process removes the skin of the coffee cherry and some of the sticky mucilage; then it is dried in the sun on raised beds, monitored carefully and circulated often. The colour of the coffee while drying is a dark yellowish colour, hence the name.

In the cup we found that this high altitude coffee has a warm bourbon vanilla aroma, an interesting blue raspberry acidity and honey sweetness, and a very creamy mouthfeel. This is a Direct Trade coffee.
