This Costa Rican Geisha is part of our Limited Edition Ruva series. Carbonic Maceration is a fermentation process where whole cherries are sealed in airtight tanks with low oxygen and high carbon dioxide. This environment causes sugars in the cherries to slowly break down, imparting incredibly unique flavours. After 38 hours of carbonic maceration, this Geisha was depulped with some mucilage left on the beans to dry on raised beds.
This process imparts remarkably pleasant and complex notes. Expect a very juicy cup with a sweet and floral profile.
