ABOUT RUVA 'GEISHA' - NATURAL:
Natural processing is the original coffee processing method and designed to create immense flavour. Cherries are hand picked and left on raised drying beds with all of the pulp still intact, then hulled to extract the bean from dry skinbefore shipment. Keeping the skin and fruit intact creates more fermentation and flavour development, especially with a delicate varietal like Geisha. In this instance, natural processing has created rich notes of pear and jasmine with a lingering, silky finish.
ABOUT RUVA 'GEISHA' - CARBONIC MACERATION:
Carbonic Maceration is a fermentation process where whole cherries are sealed in airtight tanks with low oxygen and high carbon dioxide. This environment causes sugars in the cherries to slowly break down, imparting incredibly unique flavours. After 38 hours of carbonic maceration, this Geisha was depulped with some mucilage left on the beans to dry on raised beds. This process imparts remarkably pleasant and complex notes. Expect a very juicy cup with a sweet and floral profile.
